Slow-Cooker Brisket

This Slow-Cooker Brisket recipe delivers irresistibly tender, juicy, and flavorful beef with minimal effort. Perfect for quick weeknight dinners or special gatherings, it combines simple ingredients and hands-off cooking to create a deep, rich, melt-in-your-mouth brisket every time.

Ingredients

Scale

Main Ingredients

  • 34 lbs well-marbled beef brisket
  • 2 cups beef broth
  • 45 garlic cloves, whole
  • 1 large onion, sliced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Optional Variations

  • Crushed red pepper flakes or chipotle powder (for spicy kick)
  • Fresh rosemary, thyme, or bay leaves (for herb infusion)
  • Barbecue sauce (to add towards end for tangy glaze)
  • Soy sauce and fresh ginger (to replace Worcestershire sauce for Asian twist)
  • Carrots, potatoes, or mushrooms (to add directly to the slow cooker for a one-pot meal)

Instructions

  1. Prep and Season the Brisket: Pat the brisket dry with paper towels. Generously season both sides with salt, freshly ground black pepper, smoked paprika, and sprinkle brown sugar to build a flavorful crust.
  2. Sear the Brisket: Heat olive oil in a hot skillet. Sear the brisket on all sides until browned, locking in juices and developing rich flavor before slow cooking.
  3. Prepare the Slow Cooker: Place sliced onions and whole garlic cloves at the bottom of the slow cooker. Pour in beef broth and Worcestershire sauce to create a savory braising liquid.
  4. Slow Cook the Brisket: Lay the seared brisket on top of the onions and garlic. Cover and cook on high for 4-5 hours or low for 7-8 hours, until the meat is tender and pulls apart easily.
  5. Rest and Slice: Remove the brisket once cooked and let it rest for 10 minutes to allow juices to redistribute. Slice against the grain for the most tender bites.

Notes

  • Trim a thin layer of fat on the brisket, leaving some for flavor but removing excess to avoid greasiness.
  • Don’t skip searing the brisket as it develops a savory flavor base slow cooking alone cannot achieve.
  • Use a meat thermometer to check for an internal temperature between 190°F and 200°F to ensure ideal tenderness.
  • Always slice brisket against the grain to shorten muscle fibers and maximize tenderness.
  • Let the cooked brisket rest before slicing to seal in juices and enhance texture.
