Instructions

  2. Mix the Ingredients: In a large bowl, whisk the eggs and season with salt and pepper. Stir in the grated cheddar cheese, chopped spring onions, and any optional herbs or extras you prefer. Gently fold in the cooled potato gems carefully to avoid mashing them, preserving their texture.
  3. Fill the Muffin Tin: Lightly grease a medium-sized muffin tin with cooking spray or oil. Spoon the potato and egg mixture evenly into each muffin cup, pressing down lightly to help them hold together during baking.
  4. Bake Until Golden: Preheat the oven to 180°C (350°F). Bake the muffins for 15 to 20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
