  • 1 cup heavy cream
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 3/4 cup freshly grated Parmesan cheese

Instructions

  1. Prepare the Pasta: Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside, reserving one cup of pasta water for later use.
  2. Sauté the Shrimp: In a large skillet over medium heat, heat olive oil and sauté the seasoned shrimp until they turn pink and curl, about 2 minutes on each side. Remove the shrimp from the skillet and keep warm.
  3. Build the Sauce: In the same skillet, add minced garlic and cook until fragrant, about 30 seconds to 1 minute. Stir in chopped sun-dried tomatoes, heavy cream, and red pepper flakes. Simmer gently to meld flavors and let the sauce thicken slightly.
  4. Add Cheese and Herbs: Stir in freshly grated Parmesan cheese, allowing it to fully melt into the sauce. Finish by adding fresh chopped basil or parsley for a burst of brightness and color.
  5. Combine Pasta and Shrimp: Toss the cooked pasta and shrimp back into the sauce. If necessary, add some reserved pasta water a little at a time to loosen the sauce and reach desired consistency. Mix thoroughly to coat evenly and serve immediately.
