  • 700g firm starchy potatoes (Yukon Gold or Russets), peeled and thinly sliced (about 3 mm thick)
  • 200g thick-cut or streaky bacon, chopped into bite-sized pieces
  • 350ml double cream or heavy cream
  • 150g grated sharp cheddar cheese (or cheese blend of your choice)
  • 2 cloves garlic, minced
  • 2 tbsp fresh chives or parsley, finely chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the ingredients: Preheat your oven to 180°C (350°F). Peel and thinly slice the potatoes about 3 millimeters thick for even cooking. Chop the bacon into bite-sized pieces and finely mince the garlic and fresh herbs.
  2. Cook the bacon: In a frying pan over medium heat, cook the bacon until crispy but not burnt. Remove and set aside, leaving some rendered fat in the pan to add flavor to the cream sauce if desired.
  3. Make the cream mixture: In a bowl, combine the double cream, minced garlic, salt, and pepper. Whisk gently until well mixed to create a luscious sauce.
  4. Layer the potatoes and bacon: Grease a baking dish. Arrange a layer of potato slices, slightly overlapping. Sprinkle some cooked bacon and a handful of grated cheese over the layer. Pour a little cream mixture on top. Repeat the layers until all ingredients are used, finishing with a good layer of cheese on top.
  5. Bake to perfection: Cover the dish with foil and bake for about 45 minutes. Remove the foil, increase the oven temperature to 200°C (390°F), and bake for another 15 minutes until the top is golden, bubbly, and crispy.
