  • 1/2 cup (113 g) unsalted butter
  • 2 large eggs
  • 1/2 cup (120 g) sour cream
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 3/4 cups (220 g) all-purpose flour
  • 3/4 cup (75 g) unsweetened dark cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups (300 g) granulated sugar

Optional Add-ins and Toppings

  • Chocolate chips (dark or semi-sweet) – optional
  • Cream cheese frosting or mascarpone frosting – optional
  • Whipped cream – optional
  • Cocoa powder, shaved chocolate, or fresh raspberries for garnish – optional

Instructions

  1. Prepare Your Ingredients: Preheat the oven to 350°F (175°C) and grease your cake pans. Measure and prepare all ingredients for smooth baking.
  2. Mix the Dry Ingredients: In a large bowl, sift together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt to ensure even mixing and a light texture.
  3. Warm the Guinness and Butter: In a saucepan, gently heat the Guinness stout and butter together until the butter is fully melted, helping to meld flavors and make incorporation easier.
  4. Combine Wet Ingredients: In a separate bowl, whisk sugar, eggs, sour cream, and vanilla extract until the mixture is smooth and slightly fluffy.
  5. Combine Wet and Dry Mixtures: Slowly add the dry mixture to the wet ingredients, mixing gently. Gradually pour in the warm Guinness and butter blend, stirring until the batter is smooth and uniform.
  6. Bake the Cake: Pour the batter evenly into prepared pans. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely before frosting.
  7. Frost and Decorate: Once cooled, generously apply your chosen frosting, such as classic cream cheese frosting. Garnish with cocoa powder, shaved chocolate, or fresh raspberries as desired.

Notes

  • Use room temperature eggs and sour cream for better batter consistency and rise.
  • Do not overmix batter to keep the cake tender and light.
  • Use real Guinness stout for the authentic distinct flavor.
  • Check for doneness starting at 40 minutes to avoid overbaking.
  • Allow cakes to cool completely before frosting to prevent melting.
