Liquids and Fats

  • 2 cups beef broth
  • 2 tablespoons butter
  • 2 tablespoons cooking oil (such as vegetable or olive oil)

  • 2 sprigs fresh thyme or rosemary

Instructions

  1. Prepare the Ingredients: Slice the onions thinly and grate the cheese. Trim the steak of excess fat and pat dry to ensure proper browning during searing.
  2. Brown the Steak: Heat oil and butter in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear the steak on both sides until it develops a deep golden crust, locking in juices and flavor.
  3. Caramelize the Onions: Remove the steak temporarily. Add the sliced onions and a pinch of salt to the same pot. Cook slowly over medium-low heat, stirring occasionally until the onions turn golden brown and sweet.
  4. Deglaze and Build the Braise: Add minced garlic to the pot, then pour in beef broth to deglaze, scraping up all the flavorful browned bits from the bottom. Return the steak to the pot, add fresh thyme or rosemary, and bring to a gentle simmer.
  5. Slow Braise: Cover the pot and cook on low heat for 1.5 to 2 hours, or until the steak is tender and easily shred with a fork.
  6. Add Cheese and Finish: Stir in flour or cornstarch to thicken the sauce. Layer the grated cheese over the steak and onions, then cover and allow the cheese to melt gradually or briefly broil just before serving.
