Ingredients

Scale

Pasta and Vegetables

  • 2 cups rotini or penne pasta (or your favorite shape)
  • 2 cups fresh broccoli florets
  • 1 cup cherry tomatoes (optional)

Dressing

  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Add-Ons and Garnish

  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 cup croutons
  • Freshly ground black pepper to taste

For Homemade Caesar Dressing (optional)

  • 1/4 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp freshly grated Parmesan cheese

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta for the salad.
  2. Prepare the Broccoli: While the pasta cooks, cut broccoli into small florets and blanch in boiling water for 1-2 minutes, then immediately transfer to ice-cold water to keep the broccoli crisp and vibrantly green.
  3. Mix the Dressing: If using store-bought dressing, give it a good stir. For homemade Caesar dressing, whisk together mayonnaise, olive oil, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, and grated Parmesan until creamy and smooth.
  4. Combine All Ingredients: In a large bowl, toss the cooled pasta, blanched broccoli, and cherry tomatoes if using. Add the Caesar dressing and mix gently until everything is coated evenly.
  5. Add Finishing Touches: Sprinkle with freshly grated Parmesan cheese, black pepper, and croutons just before serving. Give it one final gentle toss and serve immediately or chill for later.

Notes

  • Don’t overcook broccoli; blanch quickly to preserve crunch and nutrients.
  • Rinse pasta with cold water to stop cooking and keep it firm for the salad.
  • Use freshly grated Parmesan for best flavor and texture meld.
  • Toss ingredients gently to avoid breaking pasta or broccoli.
  • Adjust lemon juice or add a pinch of salt if dressing feels too rich.
