Ingredients

Scale

Steak

  • 1 lb steak (flank, sirloin, or ribeye), thinly sliced against the grain

Marinade

  • 1/4 cup soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tbsp mirin or honey
  • 2 cloves garlic, freshly minced
  • 1 tbsp fresh grated ginger

Cooking & Garnish

  • 12 tbsp vegetable oil for cooking
  • 2 green onions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (optional, for garnish)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the soy sauce, mirin (or honey), freshly minced garlic, and grated ginger until well blended and aromatic, forming the teriyaki glaze base.
  2. Marinate the Steak: Slice the steak thinly against the grain for tenderness. Place slices into the marinade ensuring all pieces are coated. Marinate for at least 15-20 minutes, or up to 1 hour for deeper flavor.
  3. Heat the Pan: Preheat a large skillet or grill pan over medium-high heat. Add vegetable oil to prevent sticking and help develop a caramelized crust on the steak.
  4. Cook the Steak: Remove steak from marinade letting excess drip off. Cook in batches to avoid overcrowding, searing each side 1-2 minutes until cooked through but still juicy. Avoid overcooking to maintain tenderness.
  5. Reduce the Marinade: While cooking steak, pour leftover marinade into a small saucepan. Heat over medium until slightly thickened to a glossy glaze perfect for drizzling.
  6. Serve and Garnish: Arrange the steak slices on a plate, drizzle with the thickened teriyaki glaze, and sprinkle with chopped green onions and toasted sesame seeds for flavor and appearance.

Notes

  • Slice Against the Grain: Ensures steak is tender and easy to chew.
  • Don’t Skip Marinating: Even 15 minutes greatly enhances flavor.
  • High Heat is Key: Quickly sear to lock in juices and create a crust.
  • Batch Cooking: Prevents overcrowding for even browning.
  • Reserve and Thicken Marinade: Maximizes flavor and reduces waste.
  • Use Fresh Ingredients: Fresh garlic and ginger provide best aroma and taste.
