Ingredients

Scale

Main Ingredients

  • 2 pounds sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or cream (optional)
  • 12 tablespoons olive oil or butter
  • 1 teaspoon ground cumin (optional)
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Peel and dice the sweet potatoes into roughly equal pieces to ensure even cooking. Chop the onion and mince the garlic so they’re ready to sauté.
  2. Sauté the Aromatics: Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant, about 5 minutes—this builds the soup’s flavor foundation.
  3. Cook the Sweet Potatoes: Add the diced sweet potatoes to the pot along with your selected spices. Stir well to coat everything with the spices and cook for a few minutes to release their aromas.
  4. Add Broth and Simmer: Pour in vegetable or chicken broth until the sweet potatoes are just covered. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
  5. Blend Until Smooth: Remove the pot from heat and use an immersion blender to puree the soup until silky and smooth. Alternatively, transfer in batches to a blender, then return to the pot.
  6. Add Creaminess and Season: Stir in coconut milk or cream, adjusting the amount to your preferred creaminess. Season generously with salt and pepper, taste, and tweak the spices if needed.
  7. Warm Through and Serve: Heat the soup gently for a few more minutes if needed, then ladle into bowls and enjoy your cozy creation!

Notes

  • Roast Sweet Potatoes: For an extra depth of flavor, roast the sweet potatoes before adding them to the pot.
  • Use Fresh Spices: Freshly ground spices can dramatically enhance the soup’s aroma and taste.
  • Don’t Skip Sautéing: Cooking onions and garlic first unlocks their sweetness and layers of flavor.
  • Adjust Thickness: Add more broth to thin the soup or simmer longer uncovered for a thicker consistency.
  • Blend Carefully: Allow the soup to cool slightly before blending to avoid splatters and burns.
