Ingredients

Scale

Salmon

  • 4 fresh salmon fillets (skin-on, about 6 oz each)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil (plus more for sautéing)

Sauce

  • 1/2 cup sun-dried tomatoes, finely chopped (soaked if very dry)
  • 3/4 cup heavy cream (or coconut cream for dairy-free)
  • 2 cloves garlic, finely chopped
  • 2 shallots, finely chopped
  • 1/3 cup freshly grated Parmesan cheese
  • 2 tbsp fresh basil or parsley, chopped
  • Salt and pepper, to taste

Optional Garnishes

  • Fresh basil or parsley, chopped
  • Toasted pine nuts
  • Drizzle of good-quality olive oil
  • Lemon wedges

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry and season generously with salt and black pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Place the salmon skin-side down and cook for 4-5 minutes until the skin is crispy. Flip the fillets and cook the other side just until the salmon is opaque through but still juicy. Remove salmon from skillet and set aside.
  2. Sauté Aromatics: In the same skillet, add a little more olive oil if needed. Add finely chopped garlic and shallots, sautéing gently until fragrant and soft, about 1-2 minutes, to build the flavorful base of the sauce.
  3. Make the Sun-Dried Tomato Cream Sauce: Add the finely chopped sun-dried tomatoes to the skillet, then pour in the heavy cream. Stir well and let the sauce simmer gently to thicken slightly and allow the flavors to meld beautifully.
  4. Finish with Herbs and Cheese: Stir in the freshly grated Parmesan cheese and chopped basil or parsley. Season the sauce with salt and black pepper to taste. This creates a luscious sauce with a perfect balance of tangy, creamy, and herbal notes.
  5. Combine and Serve: Return the salmon fillets to the pan and spoon the sauce generously over them. Let everything warm together for about a minute to blend flavors. Serve immediately, garnished as desired for an impressive presentation.

Notes

  • Choose quality salmon: Fresh, wild-caught salmon will yield the best flavor and texture.
  • Don’t overcook: Salmon is best tender and moist, so watch the cooking time carefully.
  • Use oil wisely: A mix of olive oil and butter can add richness and help achieve crispy skin.
  • Soak sun-dried tomatoes: If very dry, soak them briefly in warm water before chopping.
  • Fresh herbs matter: Adding herbs at the end keeps their bright flavor intact.
