Crust

  • 5 tbsp melted butter
  • 1 tbsp granulated sugar

Filling

  • 24 oz (680 g) cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or heavy cream
  • 1 tbsp lemon juice

Instructions

  1. Prepare the crust: Crush the graham crackers into fine crumbs. Mix with melted butter and granulated sugar until the mixture holds together. Press firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for about 8-10 minutes to set, then allow to cool slightly.
  2. Make the filling: Beat softened cream cheese with sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream or heavy cream until combined. Finish by adding a splash of lemon juice for brightness and blend gently.
  3. Assemble and bake: Pour the filling over the prepared crust and smooth the top with a spatula. Bake at 325°F (160°C) for 50-60 minutes, or until the center is just set but slightly jiggles. To avoid cracks, consider wrapping the pan in foil and baking in a water bath.
  4. Cool and chill: Allow the cheesecake to cool at room temperature for about an hour. Then refrigerate for at least 4 hours or preferably overnight to fully set and develop flavor.
  5. Add fruit topping: Arrange freshly sliced peaches evenly on top of the chilled cheesecake. Scatter the mixed summer berries over the peaches for a colorful, fresh finishing touch just before serving.
