  • 2 tablespoons grated Parmesan cheese, plus extra for topping
  • 1/4 cup fine breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Mushrooms: Gently clean mushroom caps with a damp cloth to remove any dirt. Carefully remove the stems and chop them finely to use in the filling.
  2. Make the Filling: Sauté the chopped mushroom stems with minced garlic and olive oil over medium heat until soft and fragrant. Transfer the mixture to a bowl and mix in cream cheese, fresh parsley, thyme, grated Parmesan, breadcrumbs, salt, and pepper until well combined.
  3. Stuff the Caps: Using a spoon, generously fill each mushroom cap with the prepared filling, mounding the mixture slightly. Sprinkle extra grated Parmesan or breadcrumbs on top for a crispy finish.
  4. Bake to Perfection: Place stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle lightly with olive oil and bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until the tops are golden and bubbly.
  5. Serve and Enjoy: Let the mushrooms cool slightly before transferring to a serving plate. Garnish with fresh herbs such as parsley, thyme, or chives and serve warm.
