Filling

  • 1 cup cooked rice

  • 1 tsp oregano
  • 1 tsp paprika
  • Salt and pepper to taste

Topping

  • 1 cup shredded mozzarella or cheddar cheese

  • 2 tbsp olive oil (for sautéing)
  • 1/4 cup water or broth (for baking dish moisture)

Instructions

  1. Prepare the Peppers: Wash and dry the bell peppers. Slice off the tops and carefully remove the seeds and membranes to create hollow vessels for the filling.
  2. Cook the Filling: In a large skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic until soft and fragrant. Add the ground meat and cook until browned. Stir in cooked rice, diced tomatoes, oregano, paprika, salt, and pepper. Mix thoroughly so flavors meld.
  3. Stuff the Peppers: Spoon the meat and rice mixture into each hollowed bell pepper, packing gently but avoiding overfilling. Top each filled pepper with shredded cheese to melt during baking.
  4. Bake to Perfection: Arrange the stuffed peppers upright in a baking dish. Pour water or broth into the bottom of the dish for moisture. Cover with foil and bake at 375°F (190°C) for 30–35 minutes. Remove the foil for the last 10 minutes to allow the cheese to brown beautifully.
  5. Rest Before Serving: Let the stuffed peppers rest for 5 minutes after baking to settle their juices and make serving easier.

  • Pick bell peppers that stand upright naturally to prevent tipping during baking.
  • Do not overstuff peppers; leave some room at the top to avoid spillover.
  • Sauté onions and garlic thoroughly to deepen the filling’s flavor.
