Filling Ingredients
- 1 cup fresh strawberries, washed, hulled, and chopped
- 1/4 cup granulated sugar
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
- 1/4 teaspoon cinnamon (optional)
Crust Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup cold unsalted butter, cut into small pieces
- 3–4 tablespoons cold water
Finishing Ingredients
- 1 egg, beaten (for egg wash)
- Prepare the Strawberry Filling: Wash and hull fresh strawberries, then chop them into small pieces. In a saucepan over medium heat, combine the strawberries with sugar, lemon juice, cornstarch, and optional cinnamon. Cook while stirring until the mixture thickens and bubbles. Remove from heat and allow the filling to cool completely.
- Make the Crust Dough: In a mixing bowl, cut the cold unsalted butter into the all-purpose flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add cold water while stirring until the dough comes together. Be careful not to overwork it for a flaky texture. Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes.
- Roll and Cut Dough Hearts: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a heart-shaped cookie cutter to cut out an even number of hearts for both the pie tops and bottoms. Gather the dough scraps, reroll them, and continue cutting until all dough is used.
- Fill and Seal the Pies: Place a spoonful of the cooled strawberry filling onto the center of half the heart-shaped dough pieces. Lightly brush the edges with water, then place another heart-shaped dough piece on top. Press the edges firmly with a fork to seal and create a decorative border. Cut small slits on the top of each pie to allow steam to escape during baking.
- Egg Wash and Bake: Brush each hand pie with the beaten egg to achieve a glossy golden finish. Arrange the pies on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 20–22 minutes or until the crusts turn golden brown. Let cool slightly before serving.
Notes
- Use cold ingredients (butter and water) to ensure a flaky crust.
- Do not overfill the pies to avoid bursting during baking.
- Chill assembled pies for 10 minutes before baking to help maintain shape.
- Apply egg wash gently to prevent pooling and uneven browning.
- Cut small steam vents on pie tops to prevent soggy crusts.
