  • 2 tablespoons Butter
  • 1 tablespoon Fresh Herbs (Rosemary or Thyme)

Instructions

  1. Prepare the Beef: Cut the beef tenderloin or sirloin into uniform bite-sized cubes, about 1 to 1.5 inches each, ensuring even cooking and tender texture.
  2. Season the Steak Bites: In a bowl, toss the beef cubes with olive oil, freshly minced garlic, salt, and pepper. Let them marinate for at least 10 minutes to absorb all the flavors.
  3. Heat Your Pan: Preheat a heavy-bottomed or cast iron skillet over medium-high heat until very hot to achieve a perfect sear and lock in juices.
  4. Sear the Steak Bites: Place the steak cubes in a single layer without overcrowding the pan. Sear each side for 1-2 minutes until browned but still juicy inside.
  5. Add Butter and Herbs: Lower the heat slightly and add butter along with fresh rosemary or thyme. Spoon the melted butter over the steak bites to enhance flavor and add succulence.
  6. Rest and Serve: Remove the steak bites from the pan and let them rest for a few minutes to lock in juices before serving.
