Smoked Sausage & Cheesy Potato Bake is a hearty and comforting casserole combining smoky, savory smoked sausage with tender, creamy potatoes and melted cheese. It’s an easy, one-dish meal perfect for weeknights or family dinners, featuring simple ingredients and adaptable to suit various tastes or dietary needs.

Ingredients

Scale

Proteins and Vegetables

  • 1 pound smoked sausage, sliced into bite-sized pieces
  • 4 cups potatoes, peeled and thinly sliced (use starchy or waxy potatoes)
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Dairy and Cream

  • 2 cups shredded sharp cheddar cheese (or cheese blend)
  • 1 ½ cups milk or cream
  • 2 tablespoons butter

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Optional herbs such as thyme or paprika, to taste

Instructions

  1. Prepare the Ingredients: Slice the smoked sausage into bite-sized pieces, peel and thinly slice the potatoes, dice the onion, and mince the garlic. Get everything ready to ensure even cooking and layering.
  2. Sauté Sausage and Aromatics: In a skillet over medium heat, cook sausage slices until browned and their smoky oils release. Add diced onions and minced garlic, cooking until softened and fragrant to develop flavor.
  3. Layer the Bake: Grease a casserole dish, then arrange half of the sliced potatoes evenly in the dish. Sprinkle sautéed sausage and onions over the potatoes, then add a generous layer of shredded cheese. Repeat with remaining potatoes, sausage, and cheese layers.
  4. Add Creamy Mixture: Whisk together milk or cream with salt, pepper, and any preferred seasoning. Pour the mixture evenly over the layered casserole to help the potatoes cook evenly and the cheese melt into a creamy sauce.
  5. Bake Until Golden: Cover the casserole dish with foil and bake in a preheated oven at 375°F (190°C) for about 45 minutes. Remove the foil for the last 15 minutes to allow the top to brown and crisp to a golden finish.

Notes

  • Use uniform potato slices to ensure even cooking.
  • Spread sausage pieces evenly to avoid clumping and enhance flavor distribution.
  • Choose a cheese that melts well and complements smoky sausage.
  • Keep the dish covered during most of baking to cook potatoes through, then uncover to crisp the top.
  • Let the bake rest slightly before serving to make slicing easier.
