Ingredients

Scale

Protein

  • 4 bone-in chicken thighs

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup pumpkin purée (canned or fresh)

Liquids

  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup vegetable or chicken broth

Spices & Seasonings

  • 2 tablespoons curry powder
  • Salt and pepper, to taste

Optional Garnishes & Additions

  • Fresh cilantro, chopped, for garnish
  • Chopped fresh chili or cayenne pepper for heat
  • Diced carrots, sweet potatoes, or spinach for extra veggies
  • Fresh basil or mint as herb alternatives

Instructions

  1. Prepare the Base: Chop the onions, mince the garlic, and grate the fresh ginger. These aromatics will form the savory and fragrant foundation of your curry.
  2. Layer Ingredients in the Slow Cooker: Place the chicken thighs at the bottom of the slow cooker. Add the chopped onions, garlic, grated ginger, curry powder, pumpkin purée, coconut milk, and broth on top. Stir gently to combine without disturbing the chicken too much.
  3. Cook Low and Slow: Cover the slow cooker and set it on low for 6 to 8 hours or on high for 3 to 4 hours. Cook until the chicken is tender and all the flavors have melded beautifully.
  4. Final Seasoning and Serve: Stir the curry well, then season with salt and pepper to taste. Sprinkle fresh cilantro on top if desired. Serve warm with your choice of side dishes or garnishes.

Notes

  • Use bone-in chicken thighs for extra flavor and juiciness.
  • Do not over-stir during cooking to maintain tender chicken pieces and curry texture.
  • Choose full-fat coconut milk for richer, creamier curry.
  • Add fresh herbs like cilantro last to preserve their bright flavor.
  • Adjust broth amounts as needed depending on your slow cooker and desired sauce consistency.
  • For a spicier curry, add fresh chili or cayenne pepper.
  • Slow cook uncovered for the last 30 minutes or use a cornstarch slurry to thicken the curry if needed.
  • Leftovers can be refrigerated for 3 to 4 days or frozen up to 3 months.
  • Reheat gently on the stovetop with a splash of broth or water to keep the sauce creamy.
