  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Oils and Seasonings

  • 2 tbsp olive oil or butter
  • 1 tsp caraway seeds (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the ingredients: Slice the kielbasa into bite-sized rounds, dice the potatoes into even cubes, finely chop the onion, and mince the garlic. Rinse and drain the sauerkraut well to remove excess liquid.
  2. Cook the potatoes: Heat olive oil or butter in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they turn golden and begin to soften.
  3. Sauté the onion and garlic: Add the chopped onions to the potatoes and cook until translucent and slightly caramelized. Stir in the garlic and cook for another minute until fragrant.
  4. Brown the kielbasa: Push the potatoes and onions to one side of the skillet and add the sliced kielbasa. Cook until the sausage develops a nice browning on the edges, about 5-6 minutes.
  5. Add sauerkraut and spices: Mix in the drained sauerkraut and sprinkle with caraway seeds if using. Stir everything together and cook for an additional 5 minutes, letting the flavors meld. Season with salt and black pepper to taste.
