Ingredients

Scale

Proteins

  • 8 oz sirloin or flank steak, cut into bite-sized pieces
  • 8 oz medium shrimp, peeled and deveined
  • 2 large eggs, beaten

Rice

  • 3 cups cooked long-grain white rice or jasmine rice, preferably day-old and chilled

Vegetables & Aromatics

  • 1/2 cup peas
  • 1/2 cup diced carrots
  • 3 green onions, sliced (separate white and green parts)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced

Oils & Sauces

  • 2 tbsp vegetable or canola oil
  • 1 tsp sesame oil (optional)
  • 3 tbsp soy sauce (use gluten-free tamari for gluten-free option)

Instructions

  1. Prep Your Ingredients: Chop the steak into bite-sized pieces, peel and devein the shrimp if needed, finely chop vegetables, and beat the eggs. Fluff the day-old rice with a fork to prevent clumps during cooking.
  2. Cook the Steak and Shrimp: Heat vegetable or canola oil in a large skillet or wok over medium-high heat. Sear the steak pieces for 2-3 minutes until browned but still tender inside, then remove and set aside. Using the same pan, cook shrimp for about 2 minutes per side until pink and opaque, then remove.
  3. Scramble the Eggs: Add a little more oil if needed, then pour in the beaten eggs and scramble gently until soft-cooked. Remove and set aside with steak and shrimp to keep warm.
  4. Stir-Fry the Vegetables and Aromatics: In the same pan, add garlic and ginger and stir quickly until fragrant. Add peas, carrots, and the white parts of green onions. Cook for 3-4 minutes until vegetables are tender yet crisp, stirring often.
  5. Combine Everything with Rice: Add the cooked rice to the pan with vegetables and toss to combine. Return steak, shrimp, and scrambled eggs to the pan. Drizzle soy sauce and optional sesame oil over the mixture, stirring thoroughly to heat through and meld flavors for 2-3 minutes.
  6. Final Touches: Taste the fried rice and add more soy sauce or a pinch of salt and pepper if needed. Garnish with the green parts of the sliced green onions before serving.

Notes

  • Use day-old rice for drier grains that fry well and avoid mushiness.
  • Prepare all ingredients before cooking as fried rice cooks quickly.
  • Cook over high heat to seal in flavors and textures.
  • Don’t overcrowd the pan; cook in batches if needed for even browning.
  • Add soy sauce gradually to control saltiness and ensure even coating.
