Ingredients

Scale

Seafood

  • 1 cup fresh lump crab meat
  • 1 cup peeled and deveined shrimp

Vegetables & Aromatics

  • 1 medium onion, finely diced
  • 1 celery stalk, finely diced
  • 1 medium carrot, finely diced
  • 2 cloves garlic, minced

Liquids & Dairy

  • 2 tablespoons butter
  • 2 tablespoons tomato paste
  • 1/2 cup dry white wine
  • 4 cups fish or seafood stock
  • 1 cup heavy cream

Herbs & Seasonings

  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Seafood: Clean and peel the shrimp, setting them aside. Gently flake the crab meat into bite-sized pieces, ensuring no shell fragments remain for a pleasant seafood experience.
  2. Sauté the Aromatics: In a large pot, melt butter over medium heat. Add finely diced onion, celery, and carrot, cooking gently for about 8 minutes until softened and caramelized, developing a savory base for the bisque.
  3. Build Your Base: Stir in minced garlic and tomato paste, cooking for 2 more minutes to deepen flavors. Pour in the white wine to deglaze the pan, scraping up any browned bits for added taste.
  4. Add Stock and Herbs: Add the fish or seafood stock along with fresh thyme sprigs and a bay leaf. Bring to a simmer and cook gently for 20 minutes to meld and intensify the flavors.
  5. Blend for Smoothness: Remove the herbs and use an immersion blender or regular blender to puree the soup until silky smooth and velvety, creating the bisque’s characteristic creamy texture.
  6. Finish with Seafood and Cream: Return the bisque to low heat, stir in the heavy cream, then add the shrimp and crab meat. Cook just until the shrimp turn pink and seafood is heated through, carefully seasoning with salt and pepper to taste without overcooking.

Notes

  • Use fresh crab and shrimp for the best flavor and texture.
  • Keep the soup at a gentle simmer to avoid toughening the shrimp.
  • Deglaze thoroughly with white wine to lift every bit of flavor from the pan.
  • Blend the soup well to achieve a smooth, luxurious bisque.
  • Season the bisque at the end to maintain flavor balance as cream mellows seasonings.
