  • Black pepper, to taste
  • Fresh parsley or basil, chopped (optional, for garnish)

Instructions

  1. Prepare the ingredients: Slice sausages into bite-sized pieces, thinly slice bell peppers and onion, and mince garlic finely for even flavor distribution.
  2. Cook the sausage: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage pieces and cook, turning occasionally, until browned on all sides and cooked through (about 6-8 minutes). Remove from skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add remaining olive oil if needed. Add sliced onions and bell peppers. Cook until softened and starting to caramelize, about 8-10 minutes. Stir in minced garlic during the last minute to avoid burning.
  4. Combine and simmer: Return sausage to the skillet with vegetables. Season with salt and black pepper. Stir to mix flavors and let cook together for a few minutes to let flavors meld.
  5. Garnish and serve: Remove from heat and sprinkle with fresh parsley or basil if desired. Serve warm as is or with favorite sides.
