Ingredients

Scale

Base Ingredients

  • 4045 saltine crackers (enough to cover a rimmed baking sheet in a single layer)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed brown sugar (light or dark)

Topping

  • 1 to 1 ¼ cups chocolate chips (milk, dark, or white chocolate)
  • Sea salt, for sprinkling (optional)

Instructions

  1. Prepare the baking sheet: Line a rimmed baking sheet with parchment paper or a silicone baking mat. Arrange saltine crackers in a single, even layer covering the entire surface to form the base.
  2. Make the toffee caramel: In a medium saucepan over medium heat, melt the butter completely. Add the brown sugar and stir continuously until the mixture comes to a bubbly boil. Continue cooking and stirring for 3 to 5 minutes until the mixture thickens and caramelizes, ensuring a smooth texture without burning.
  3. Pour caramel over crackers: Carefully pour the hot caramel evenly over the arranged saltine crackers. Use a spatula to spread and cover every piece completely, guaranteeing each cracker is soaked with the buttery caramel.
  4. Bake to set: Place the baking sheet in a preheated oven at 350°F (175°C) and bake for 5 to 7 minutes. This allows the caramel to soak into the crackers and helps set the toffee base.
  5. Add the chocolate topping: Immediately remove the pan from the oven and sprinkle chocolate chips evenly over the hot caramel layer. Let the chocolate melt for a few minutes, then spread it smoothly with a spatula for an even, glossy finish. Optionally, sprinkle flaky sea salt or crushed nuts on top.
  6. Chill and break into pieces: Transfer the baking sheet to the refrigerator and chill for about one hour or until completely hardened. Once set, break the toffee into bite-sized pieces and enjoy.

Notes

  • Use fresh, crisp saltine crackers for the best crunch and absorption.
  • Continuously stir the caramel to prevent burning and achieve smooth consistency.
  • Spread melted chocolate promptly while warm to create an even, glossy layer.
  • Allow the toffee to chill fully before breaking to ensure clean pieces.
  • Line the baking sheet with parchment paper for easy cleanup and to prevent sticking.
  • Variations: add chopped nuts, use different chocolate types, sprinkle cinnamon or cayenne, or substitute with vegan ingredients.
