Ingredients

Scale

For the Salmon Patties

  • 1 lb fresh salmon fillets
  • 1/2 cup panko breadcrumbs (or almond flour for gluten-free)
  • 2 green onions, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • 12 tbsp oil (for cooking)

For the Miso Slaw

  • 1 cup red cabbage, finely shredded
  • 1 cup green cabbage, finely shredded
  • 1 tbsp miso paste (white or yellow)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp low-fat mayonnaise or Greek yogurt (or dairy-free alternative)

For Assembly

  • Whole grain or brioche buns
  • Optional garnishes: avocado slices, fresh herbs (dill, cilantro, parsley), toasted sesame seeds, cucumber ribbons

Instructions

  1. Prepare the Salmon Patties: Finely chop the fresh salmon fillets or pulse them in a food processor to achieve a coarse texture. In a bowl, combine the salmon with panko breadcrumbs, chopped green onions, salt, and pepper. Mix gently until just combined, then shape the mixture into evenly sized patties about 4 inches in diameter to ensure even cooking and good hold.
  2. Cook the Salmon Patties: Heat a non-stick skillet or grill pan over medium heat with a little oil. Carefully place the salmon patties in the pan and cook for 4-5 minutes on each side until they form a golden crust and are cooked through. Avoid pressing the patties down during cooking to keep them tender and fluffy inside.
  3. Make the Miso Slaw: While the patties cook, finely shred the red and green cabbage. In a separate bowl, whisk together miso paste, rice vinegar, sesame oil, and mayonnaise or Greek yogurt until smooth. Toss the shredded cabbage in the dressing until fully coated, then set aside to allow the flavors to meld and the cabbage to soften slightly.
  4. Assemble the Salmon Burger with Miso Slaw: Lightly toast the buns for added texture. On each bun bottom, place a cooked salmon patty, then top generously with the miso slaw. Add any optional garnishes such as avocado slices or fresh herbs, then cap with the top bun. Serve immediately to enjoy the contrast of warm patty and crisp slaw.

Notes

  • Use fresh, high-quality salmon (fresh or sushi-grade) for best flavor.
  • Handle the salmon mixture gently to avoid dense patties.
  • Chill the shaped patties for 15-30 minutes before cooking to help them hold their shape.
  • Toast buns to add crunch and prevent sogginess.
  • Allow the miso slaw to rest for 10 minutes to develop flavors and soften the cabbage.
  • Adjust miso paste quantity gradually in the slaw dressing to avoid overpowering taste.
