Ingredients

Scale

Main Ingredients

  • 1 3/4 cups all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin spice blend (cinnamon, nutmeg, ginger, cloves)
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil or melted butter (or coconut oil for vegan version)
  • 2 large eggs (or 2 flax eggs for vegan version)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice blend to evenly distribute the leavening agents and spices.
  3. Combine Wet Ingredients: In a separate bowl, beat together the pumpkin puree, brown sugar, eggs, oil, and vanilla extract until smooth and creamy to create a moist base.
  4. Fold Ingredients Together: Gradually add the dry ingredients into the wet mixture. Fold gently with a spatula until just combined; avoid overmixing to keep muffins tender and light.
  5. Fill and Bake: Divide the batter evenly into muffin cups, filling each about 3/4 full. Bake for 18-22 minutes until golden and a toothpick inserted comes out clean.
  6. Cool and Enjoy: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack. Enjoy them warm for the best comforting experience.

Notes

  • Don’t overmix the batter to avoid dense muffins.
  • Use freshly ground spices for more intense flavor.
  • If batter is too thick, add a tablespoon of milk to achieve perfect texture.
  • Use room temperature eggs and pumpkin puree for better blending.
  • Rotate muffin tin halfway through baking for even browning.
