Ingredients

Scale

Protein

  • 4 thick pork chops (bone-in or boneless)

Mushrooms and Sauce

  • 2 cups mixed mushrooms (shiitake, cremini, or button), sliced
  • 2 tablespoons miso paste (white or yellow preferred)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon mirin or honey (optional)

Aromatics & Fats

  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon butter
  • 1 tablespoon oil (vegetable or sesame oil recommended)

Garnish

  • 2 green onions, chopped
  • Optional: sesame seeds, fresh cilantro or parsley for presentation

Instructions

  1. Prepare the Pork Chops: Pat the pork chops dry with paper towels. Generously season both sides with salt and pepper. Let them rest at room temperature while you prepare the mushrooms.
  2. Cook the Mushrooms: Heat butter and oil in a large skillet over medium-high heat. Add sliced mushrooms, minced garlic, and grated ginger. Sauté for 6-8 minutes until mushrooms release moisture and brown nicely, forming the umami-rich sauce base.
  3. Add Miso and Sauces: Reduce heat to medium. Stir in miso paste, soy sauce, and if using, mirin or honey. Mix well to coat mushrooms and cook for 2-3 minutes to thicken the sauce and deepen flavors.
  4. Sear the Pork Chops: In a separate skillet or after removing mushrooms, heat additional oil or butter until hot. Add pork chops and sear for about 4 minutes per side until golden brown and cooked through, achieving a crisp exterior and juicy center.
  5. Combine and Finish: Return the mushroom mixture to the skillet with pork chops or spoon sauce generously over them. Warm together for 1-2 minutes so the pork absorbs the flavors before serving.

Notes

  • Dry the pork chops well for a golden, flavorful crust.
  • Do not overcrowd the pan when cooking mushrooms for proper browning; cook in batches if needed.
  • Use a heavy skillet like cast iron or stainless steel for even searing and heat retention.
  • Let pork rest for 5 minutes after cooking to keep the meat juicy and tender.
  • Adjust seasoning carefully as miso and soy sauce vary in saltiness.
