Instructions

  1. Prepare the Coffee Soak: Brew a strong espresso or coffee and let it cool to room temperature. Pour into a shallow dish for quickly dipping the ladyfingers, ensuring they absorb just enough liquid without becoming soggy.
  2. Whisk the Egg Yolks and Sugar: In a heatproof bowl, whisk together the egg yolks and sugar over a gentle simmer (double boiler) until the mixture thickens, lightens in color, and forms a smooth sabayon that adds richness and sweetness.
  3. Mix Mascarpone and Pistachio: Gently fold the pistachio paste or ground pistachios into the mascarpone cheese until fully incorporated, coloring the cream a vibrant green and enhancing the flavor with nutty depth.
  4. Whip the Cream: Whip the heavy cream until soft peaks form. Carefully fold the whipped cream into the mascarpone and pistachio mixture to achieve a light and airy texture.
  5. Assemble the Cups: Quickly dip each ladyfinger into the coffee soak for 1 to 2 seconds. Arrange a layer of soaked ladyfingers at the bottom of individual serving cups, then add a generous spoonful of the pistachio cream on top. Repeat the layers, finishing with a cream layer on top.
  6. Garnish and Chill: Sprinkle chopped pistachios or pistachio dust over the top. For extra flair, add cocoa powder, chocolate curls, or fresh mint leaves. Refrigerate the cups for at least 4 hours, ideally overnight, to allow flavors to meld beautifully.
