Ingredients

Scale

Base Ingredients

  • 1 cup full-fat or low-fat cottage cheese
  • 1/2 cup roasted and pureed pistachios
  • 23 tablespoons honey or maple syrup (adjust for sweetness)
  • 1 teaspoon vanilla extract
  • 1/4 to 1/2 cup milk or plant-based milk (such as almond or oat milk)

Instructions

  1. Prepare the Pistachios: Lightly roast your pistachios to enhance their bold, nutty aroma. Once cooled, grind them finely into a smooth paste that will blend seamlessly with the cottage cheese base.
  2. Blend the Base: In a blender, combine the cottage cheese, pureed pistachios, chosen milk, honey or maple syrup, and vanilla extract. Blend everything until the mixture is completely smooth and creamy without any lumps, forming a perfect ice cream base.
  3. Chill the Mixture: Transfer the blended mixture to the refrigerator and chill it for at least one hour. This step allows the flavors to meld and thickens the base slightly, improving the texture after freezing.
  4. Freeze and Stir: If using an ice cream maker, churn the mixture according to the manufacturer’s instructions until it reaches a soft-serve consistency. If not using a machine, pour the mixture into a shallow container and freeze, stirring every 30 minutes for 2 to 3 hours to break up ice crystals and maintain creaminess.
  5. Freeze Until Firm: Move the ice cream into a freezer-safe container and freeze for another 3 to 4 hours or overnight to let it firm up before serving.

Notes

  • Use fresh, unsalted pistachios for the best flavor and vibrant green color.
  • For a smoother texture, strain cottage cheese through a fine mesh or cheesecloth before blending.
  • Add honey or syrup gradually to balance sweetness without overpowering the nutty flavor.
  • If you do not have an ice cream maker, stir the mixture regularly during freezing to prevent ice crystals and keep the texture silky.
  • Let the ice cream soften at room temperature for 5-10 minutes before scooping for the best texture.
