Instructions

  1. Prepare the Onions and Feta: Finely chop the sweet onions and crumble the feta cheese into a bowl. Squeeze out any excess moisture from the onions using a clean kitchen towel or paper towels to ensure the batter remains thick and doesn’t become soggy.
  2. Mix the Batter: In a separate large bowl, whisk together the all-purpose flour, cornflour, eggs, and freshly chopped herbs until the mixture is smooth. Gently fold in the prepared onions and crumbled feta, mixing evenly but avoiding overmixing to maintain texture.
  3. Heat the Oil: Pour a layer of neutral oil into a frying pan, enough to shallow fry the fritters, and heat over medium heat. Test the oil by dropping a small amount of batter into it; the batter should sizzle immediately without burning.
  4. Fry the Fritters: Using a spoon, drop portions of the batter into the hot oil, flattening each slightly with the back of the spoon for even cooking. Fry each fritter for 3 to 4 minutes per side, or until they turn golden brown and crispy on the outside.
