Ingredients

Scale

Crepe Batter

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Fillings

  • Nutella (chocolate-hazelnut spread), as needed
  • Marshmallows, a handful per crepe
  • Graham crackers, chopped, as needed

Instructions

  1. Prepare the Crepe Batter: In a large bowl, whisk together the flour, sugar, and salt. In a separate bowl, beat the eggs and gradually add the milk and vanilla extract. Slowly combine the wet ingredients with the dry until smooth, then mix in the melted butter. Let the batter rest for about 15-20 minutes to ensure tender crepes.
  2. Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a small amount of batter into the pan, swirling it to create an even thin layer. Cook for 1-2 minutes until the edges lift, then flip and cook the other side for another minute. Set cooked crepes aside and repeat until all batter is used.
  3. Assemble the Nutella S’mores Crepes: Spread a generous layer of Nutella over each crepe. Sprinkle chopped graham crackers evenly over the Nutella. Add a handful of marshmallows on top, then fold the crepe into quarters or roll it up depending on your preference.
  4. Melt the Marshmallows and Serve: Return the filled crepes to the warm skillet and cover with a lid briefly to allow the marshmallows to soften and melt without burning the crepe. Alternatively, place crepes briefly under a broiler or use a kitchen torch for that toasted effect. Serve immediately while everything is gooey and warm.

Notes

  • Rest the batter for 15-20 minutes to improve texture by hydrating the flour completely.
  • Keep the skillet at medium heat to prevent burning and ensure even cooking.
  • Pour just enough batter to cover the pan thinly — thicker crepes won’t fold as well.
  • Use fresh eggs and quality Nutella for best flavor.
  • Toast marshmallows carefully using indirect heat or short bursts under the broiler to avoid burning.
