  • 1 cup chocolate chips (semi-sweet recommended)

Instructions

  1. Prepare Your Pan: Grease an 8×8-inch baking pan or line it with parchment paper to ensure your Mud Hen Bars come out easily with clean edges.
  2. Melt Butter and Combine with Sugar: In a saucepan over low heat, melt the butter and brown sugar together until fully combined and smooth, stirring frequently to prevent burning.
  3. Mix in Dry Ingredients: Remove from heat and stir in the rolled oats, flour, and vanilla extract until everything is evenly coated with the buttery-sugar mixture.
  4. Add Marshmallows and Chocolate Chips: Gently fold in marshmallows and chocolate chips, reserving a few to sprinkle on top before baking for an extra gooey finish.
