Instructions

  1. Roast the Eggplants: Prick the eggplants with a fork and roast them whole over an open flame or in a hot oven (about 450°F/230°C) until the skin is charred and the flesh is soft and smoky, approximately 20-30 minutes. This creates the essential smoky flavor base.
  2. Prepare Tomatoes and Garlic: While the eggplants cool, finely chop the ripe tomatoes and mince the garlic cloves to maintain the fresh, bright flavor profile.
  3. Scoop and Mash: When the eggplants have cooled enough to handle, peel away the charred skin and scoop out the tender flesh. Mash the eggplant flesh in a bowl, then mix in the chopped tomatoes and minced garlic evenly.
  4. Season and Mix: Drizzle in the extra virgin olive oil, add smoked paprika, lemon juice, salt, and black pepper. Mix thoroughly to blend all flavors, adjusting seasoning to your taste preference.
