Fritter Batter

  • 2 tablespoons chopped fresh cilantro

  • Vegetable oil, about 1/4 inch depth in skillet, for frying
  • Additional mayonnaise for brushing
  • Extra crumbled Cotija cheese for topping
  • Extra chopped cilantro for garnish
  • Extra chili powder for garnish
  • Fresh lime wedges for serving

Instructions

  1. Prepare the Batter: In a large bowl, combine fresh corn kernels, flour, mayonnaise, crumbled cheese, chopped cilantro, egg, chili powder, lime juice, salt, and pepper. Stir until the mixture forms a thick, slightly sticky batter that holds together but isn’t too dense.
  2. Heat the Oil: Pour vegetable oil into a skillet to cover the bottom by about 1/4 inch. Heat over medium heat until the oil shimmers but does not smoke. The proper temperature ensures the fritters become golden and crispy without absorbing excess oil.
  3. Fry the Fritters: Drop spoonfuls of batter into the hot oil, gently flattening each with the back of the spoon for even cooking. Fry for about 3-4 minutes per side or until golden brown and crisp. Remove fritters to a paper towel-lined plate to drain excess oil.
  4. Add Garnishes: While still warm, brush the fritters lightly with mayonnaise. Sprinkle with extra crumbled Cotija cheese, a dash of chili powder, chopped cilantro, and a squeeze of fresh lime juice to capture the signature Mexican street corn flavor.
