Ingredients

Scale

Pasta

  • 1 cup orzo pasta

Vegetables and Herbs

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped into bite-sized pieces
  • ½ cup red onion, finely diced
  • ¼ cup fresh parsley, finely chopped
  • ½ cup kalamata olives, pitted and sliced

Cheese

  • ½ cup feta cheese, crumbled

Dressing

  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Orzo: Begin by boiling water in a large pot. Add a pinch of salt and the orzo pasta, cooking it according to package instructions until al dente. Once done, drain and rinse under cold water to stop cooking and cool it for the salad.
  2. Prepare the Vegetables and Herbs: While the orzo cooks, wash and chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces. Finely chop the fresh parsley and set all aside.
  3. Make the Dressing: In a small bowl, whisk together fresh lemon juice, extra virgin olive oil, minced garlic, salt, and pepper. This simple vinaigrette carries the flavors and gives the salad its bright, zesty finish.
  4. Combine and Toss: In a large mixing bowl, combine the cooled orzo, chopped vegetables, olives, and crumbled feta cheese. Pour the dressing over the top and toss gently but thoroughly to coat everything evenly.
  5. Chill and Serve: Let the salad rest in the fridge for at least 30 minutes to allow the flavors to meld beautifully before serving chilled.

Notes

  • Al Dente Texture: Avoid overcooking the orzo to keep a satisfying bite and prevent mushiness.
  • Chill Thoroughly: Cooling the salad enhances its flavors and makes it more refreshing on hot days.
  • Adjust Acidity: Taste the dressing before tossing and add more lemon juice if you want extra brightness.
  • Use Fresh Ingredients: Fresh herbs and veggies make a noticeable difference in taste and presentation.
  • Allow Time to Marinate: Letting the salad sit for a while lets the flavors marry perfectly.
