Ingredients

Scale

Chicken

  • 4 skinless, boneless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Sautéing

  • 2 tablespoons olive oil
  • 1 tablespoon butter

Sauce

  • 3 cloves garlic, minced
  • 1/2 cup chicken broth (gluten-free)
  • 1 cup heavy cream
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed recommended)
  • 1/2 cup grated parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Garnish

  • Additional grated parmesan cheese
  • Fresh basil or parsley, chopped

Instructions

  1. Step 1: Sear the Chicken – Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil and butter in a skillet over medium-high heat. Add the chicken and cook each side for 5–7 minutes until golden brown and cooked through. Remove chicken from the skillet and set aside.
  2. Step 2: Prepare the Sauce – In the same skillet, add minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth and heavy cream, stirring to combine and deglaze the pan by loosening browned bits. Add chopped sun-dried tomatoes, parmesan cheese, and red pepper flakes if using. Stir gently until the sauce thickens slightly.
  3. Step 3: Combine Chicken with Sauce – Return the chicken breasts to the skillet, nestling them into the creamy sauce. Reduce heat to low, cover, and simmer for 5 minutes to meld flavors and warm the chicken through.
  4. Step 4: Finish and Serve – Sprinkle extra parmesan cheese and fresh chopped basil or parsley over the top before serving for a bright, fresh finish.

Notes

  • Use room temperature chicken for even cooking and juiciness.
  • Don’t skip searing to develop a golden crust for flavor and texture.
  • Simmer the sauce gently on low heat to avoid curdling and achieve a silky texture.
  • Use oil-packed sun-dried tomatoes for richer flavor rather than dry-packed.
  • Fresh herbs like basil or parsley added at the end enhance aroma and presentation.
