Ingredients

Scale

Chicken

  • 2 skinless, boneless chicken breasts

Sauce

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • ½ cup sun-dried tomatoes (oil-packed preferred), chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (adjust to taste)
  • Salt and freshly ground black pepper, to taste

Other

  • 8 oz pasta of choice (fettuccine, penne, or rigatoni)
  • ¼ cup fresh basil, chopped (for garnish)

Instructions

  1. Step 1: Sear the Chicken – Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside to rest.
  2. Step 2: Prepare the Sauce – Lower the heat to medium in the same skillet. Add minced garlic and sauté until fragrant. Stir in chopped sun-dried tomatoes. Pour in chicken broth while scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly.
  3. Step 3: Add Cream and Cheese – Stir in heavy cream, freshly grated Parmesan cheese, and red pepper flakes. Mix well until the sauce thickens and becomes glossy. Season with salt and pepper to taste.
  4. Step 4: Combine Pasta and Chicken – Slice the rested chicken breasts. Add the sliced chicken back into the skillet along with the cooked pasta. Toss gently to coat everything evenly with the creamy sauce.
  5. Step 5: Finish with Fresh Basil – Remove the skillet from heat and sprinkle fresh chopped basil over the dish. Serve immediately, garnished to preference.

Notes

  • Use room temperature chicken for more even searing and juicier meat.
  • Allow the chicken to rest before slicing to retain juices and tenderness.
  • Choose oil-packed sun-dried tomatoes for softer texture and richer flavor.
  • Reserve some pasta cooking water to thin the sauce if it thickens too much before combining.
  • Freshly grate Parmesan cheese to enhance melt quality and flavor.
