Maple Glaze

  • 1/2 cup brown sugar

  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon apple cider vinegar
  • 1/4 cup water

Instructions

  1. Prepare the Ham: Score the surface of the bone-in ham in a diamond pattern about 1/4 inch deep. Pat the ham dry with paper towels to help the glaze adhere better.
  2. Make the Maple Glaze: In a medium saucepan, combine maple syrup, Dijon mustard, brown sugar, ground cloves, cinnamon, apple cider vinegar, and water. Simmer gently over low heat, stirring constantly until sugar dissolves and the glaze thickens slightly. Set aside half of the glaze for basting.
  3. Bake the Ham: Place the ham cut side down in a roasting pan and brush generously with half of the glaze. Cover loosely with foil and bake in a preheated oven at 325°F (165°C) for 1.5 to 2 hours, basting every 20 minutes with the remaining glaze.
  4. Finish and Caramelize: Remove the foil during the last 20 minutes of baking to allow the glaze to caramelize and form a golden crust. Watch carefully to avoid burning, and baste one final time before removing from oven.
  5. Rest and Slice: Let the ham rest for 15-20 minutes after baking to retain juices. Slice with a sharp knife and serve warm, letting the maple-glazed crust shine.
