Instructions

  1. Soak the Sticky Rice: Place the glutinous sticky rice in a large bowl and cover with water. Let it soak for at least 3-4 hours, or preferably overnight, to ensure the rice absorbs water evenly and remains tender after cooking.
  2. Steam the Sticky Rice: Drain the soaked rice and transfer it to a steamer lined with cheesecloth or a clean kitchen towel. Steam over boiling water for 20-25 minutes. Fluff with a fork and steam an additional 10 minutes if the texture is not yet chewy-soft and tender.
  3. Prepare the Coconut Sauce: In a saucepan over medium heat, combine coconut milk, sugar, and a pinch of salt. Stir gently until the sugar dissolves completely. Heat gently without boiling to meld the flavors. Reserve most sauce for mixing with the rice and keep some aside for serving.
  4. Mix Coconut Sauce with Sticky Rice: Transfer the hot sticky rice to a mixing bowl. Pour most of the warm coconut sauce onto the rice and fold gently to combine. Cover and let it soak for 20-30 minutes to allow the rice to absorb the coconut sauce fully, making it creamy and flavorful.
  5. Prepare the Mango: Peel the mangoes and slice them into thin, even pieces. Choose mangoes that are ripe, fragrant, and juicy to complement the richness of the coconut sticky rice.
  6. Serve and Garnish: Plate a generous portion of the coconut sticky rice alongside a fan of mango slices. Drizzle the reserved coconut sauce on top and sprinkle with toasted sesame seeds or mung beans if desired for a textured, authentic finish.
