Ingredients

Scale

Chicken

  • 1 lb bone-in chicken pieces (thighs or drumsticks preferred)

Pasta

  • 1 cup elbow macaroni pasta

Dairy

  • 1 cup evaporated milk

Aromatics

  • 3 cloves garlic, minced
  • 1 medium onion, chopped

Vegetables

  • 1 medium carrot, diced
  • 1 cup chopped cabbage

Liquid

  • 6 cups chicken broth or water

Fat

  • 2 tbsp butter or cooking oil

Seasoning

  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Prepare the Chicken Broth: Start by boiling chicken pieces in 6 cups of water until tender, about 30-40 minutes. Skim off any scum that rises to keep the broth clear.
  2. Sauté Aromatics: Heat 2 tablespoons of butter or oil in a pot over medium heat. Sauté minced garlic and chopped onions until fragrant and translucent, about 3-4 minutes, to deepen the flavor base.
  3. Cook the Vegetables: Add diced carrots to the pot and cook until slightly tender, about 3-5 minutes. Then stir in chopped cabbage and cook for another 2 minutes to retain their crunch and vibrant color.
  4. Add Broth and Chicken: Pour the prepared chicken broth along with the cooked chicken pieces into the pot. Bring to a gentle boil to combine the flavors thoroughly.
  5. Cook the Macaroni: Add 1 cup of elbow macaroni pasta into the boiling soup. Cook for 8-10 minutes or until the macaroni is soft but still firm (al dente). Avoid overcooking to prevent sogginess.
  6. Finish with Evaporated Milk: Lower the heat to low and gently stir in 1 cup of evaporated milk. Heat through without boiling to maintain the creaminess and prevent curdling.
  7. Season and Serve: Season the soup with salt and ground black pepper to taste. Remove from heat and serve hot for a comforting experience.

Notes

  • Use bone-in chicken for a richer, more flavorful broth.
  • Avoid overcooking the macaroni to prevent sogginess; serve immediately after cooking.
  • Sauté aromatics first to layer flavors and remove any raw smell.
  • Add evaporated milk gradually at low heat to avoid curdling.
  • Customize with toppings such as fried garlic, chopped green onions, or toasted bread crumbs for added texture.
