Ingredients

Scale

Main Ingredients

  • 2 cups riced cauliflower (fresh preferred, thawed and drained if frozen)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 jalapeño, finely chopped (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon Mexican spice blend (cumin, chili powder, garlic powder, paprika)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare the Veggies: Finely chop the onion, red and green bell peppers, and jalapeño. Heat olive oil in a skillet over medium heat and sauté the chopped vegetables along with minced garlic until soft and fragrant, about 5 minutes, releasing their natural sweetness.
  2. Add Spices and Cauliflower Rice: Sprinkle the Mexican spice blend over the sautéed vegetables and stir well to combine. Add the riced cauliflower, mixing thoroughly so every grain is coated with the spices.
  3. Cook Until Tender: Continue cooking the mixture, stirring occasionally, until the cauliflower rice is tender yet still has texture, about 7–10 minutes. Avoid overcooking to maintain a satisfying bite.
  4. Add Cheese and Finish: Lower the heat and evenly sprinkle shredded cheddar and Monterey Jack cheese over the skillet. Allow the cheese to melt completely into the mixture. Remove from heat, then toss in fresh cilantro and squeeze lime juice on top for a bright, tangy finish.

Notes

  • Use fresh cauliflower rice whenever possible for the best texture and flavor.
  • Avoid overcooking to prevent mushy cauliflower rice.
  • Use full-fat cheeses to ensure optimal melting and rich taste.
  • Adjust heat level by varying the amount of jalapeño or chili powder.
  • Don’t skip the lime juice as it brightens and balances flavors.
