Ingredients

Scale

Fries

  • 4 large russet potatoes, washed and cut into 1/4-inch thick fries
  • 23 tablespoons olive oil or vegetable oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 teaspoons Creole seasoning, divided (blend of paprika, garlic powder, onion powder, cayenne, and herbs)

Toppings

  • 1 cup sharp cheddar cheese, freshly shredded
  • 1/4 cup sliced pickled jalapeños
  • 23 green onions, chopped

VooDoo Sauce

  • 1/3 cup mayonnaise
  • 12 tablespoons hot sauce, or to taste

Instructions

  1. Prep and Slice Your Potatoes: Thoroughly wash the russet potatoes. Cut them into evenly sized fries, about 1/4-inch thick, to ensure even cooking and a perfect golden crunch.
  2. Season and Cook the Fries: Toss the sliced potatoes with olive or vegetable oil, salt, pepper, and half of the Creole seasoning. Spread them in a single layer on a baking sheet. Bake in a preheated oven at 425°F (220°C) for 30-35 minutes, flipping halfway through, until fries are golden and crispy.
  3. Prepare the Voodoo Sauce: While the fries bake, mix the mayonnaise and hot sauce in a small bowl. Adjust the hot sauce amount according to your preferred spice level. This sauce will be drizzled over the finished fries.
  4. Layer the Fries: Once fries are crispy, spread them on a large baking sheet or oven-safe platter. Sprinkle the remaining Creole seasoning evenly over the fries. Then top with shredded sharp cheddar cheese, pickled jalapeños, and chopped green onions.
  5. Melt the Cheese: Return the loaded fries to the oven and bake for an additional 5-7 minutes until the cheese melts and bubbles, binding the flavors together with rich, gooey texture.
  6. Drizzle and Serve: Remove the fries from the oven and generously drizzle the prepared voodoo sauce over the top. Serve immediately while warm and enjoy the delightful combination of crispy, spicy, and creamy flavors and textures.

Notes

  • Cut fries evenly for uniform cooking and optimal crispiness.
  • Soak sliced potatoes in cold water for 30 minutes before cooking to remove excess starch and enhance crunch.
  • Do not overcrowd the baking sheet; spread fries in a single layer to avoid steaming.
  • Adjust the spice level by modifying the amount of Creole seasoning and hot sauce used.
  • Use freshly shredded cheese for better melting and texture.
