Ingredients

Scale

Main Ingredients

  • Sturdy tortilla chips – enough to fill a large Bundt pan
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 lb seasoned ground beef (or 1 1/2 cups cooked black beans for vegetarian option)
  • 1 cup refried beans
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup sliced fresh or pickled jalapeños (optional but recommended)
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro

Optional Variations

  • Grilled peppers, corn, and black olives for veggie-loaded version
  • Shredded BBQ chicken instead of ground beef
  • Chipotle powder or hot sauce to add to ground beef for spicy kick
  • Plant-based cheese and avocado crema for vegan version
  • Scrambled eggs and bacon for loaded breakfast nachos

Instructions

  1. Prepare the Ground Beef or Beans: Cook the ground beef in a skillet with taco seasoning until browned and flavorful, or heat black beans with cumin and garlic for a vegetarian alternative.
  2. Layer the Refried Beans: Spoon a layer of refried beans into the bottom of a well-greased Bundt pan, spreading evenly to create a creamy base.
  3. Add Tortilla Chips and Cheese: Place a generous layer of tortilla chips over the beans, followed by a hearty sprinkle of shredded cheddar and Monterey Jack cheese. Repeat layering chips and cheese to build height and flavor.
  4. Add the Cooked Meat or Beans: Spread the seasoned ground beef or black beans evenly over the chips and cheese layer for protein-packed richness.
  5. Bake Until Melty: Place the Bundt pan in a preheated oven at 350°F (175°C) and bake for 10–15 minutes until the cheese is melted and bubbly, and the edges of the chips are crisp.
  6. Add Fresh Toppings: Remove from oven and garnish with jalapeños, green onions, cilantro, salsa, sour cream, and guacamole for fresh flavor and texture contrast.

Notes

  • Use thick, sturdy tortilla chips to avoid sogginess from wet ingredients.
  • Do not overload the Bundt pan; layer evenly to ensure even baking and easier serving.
  • Slightly warm the beans and meat before layering for better melting and flavor distribution.
  • Lightly grease the Bundt pan to prevent sticking and aid in easy removal.
  • Alternate layers of crunchy chips with wet ingredients to maintain texture balance.
