Meatloaf Mixture

  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup ketchup (plus extra for topping)

Mashed Potato Layer

  • 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • 1/2 cup warm milk
  • Salt, to taste
  • Black pepper, to taste

Optional

  • 1 cup shredded cheddar or mozzarella cheese

Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, breadcrumbs, finely chopped onion, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix gently but thoroughly until evenly combined without overworking the mixture to keep it tender.
  2. Make the Mashed Potatoes: Peel and cut potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain well, then mash with butter, warm milk, salt, and pepper until creamy and fluffy. Set aside.
  3. Layer the Casserole: Preheat oven to 350°F (175°C) and grease a casserole dish. Spread half of the meatloaf mixture evenly on the bottom. Optionally, sprinkle a layer of shredded cheese. Add the entire mashed potato mixture on top, smoothing it evenly with a spatula. Spread the remaining meatloaf mixture over the mashed potatoes and brush the top layer with ketchup for a glossy finish.
  4. Bake Until Perfect: Bake the casserole in the preheated oven for 45-55 minutes until the internal temperature of the meatloaf reaches 160°F and the top is golden and bubbling. Remove from oven and let rest for 10 minutes to firm up the layers before serving.
