Lasagna Soup

Lasagna Soup is a cozy and comforting meal that captures the flavors of classic Italian lasagna in a rich, cheesy, and meaty tomato broth loaded with tender noodles, creamy ricotta, and melted mozzarella and parmesan. This quick and easy soup cooks in under an hour, making it perfect for family dinners, chilly evenings, or any time you crave a warm and satisfying dish without the fuss of traditional lasagna layers.

Ingredients

Scale

Meat and Aromatics

  • 1 pound ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Tomato and Broth Base

  • 28 ounces crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste

Noodles and Cheese

  • 6 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Herbs and Garnish

  • Fresh basil leaves, for garnish

Instructions

  1. Brown the Meat and Sauté Aromatics: In a large pot, cook the ground beef or Italian sausage over medium heat until browned and cooked through. Drain excess fat, then add diced onions and minced garlic. Sauté until the onions are translucent and fragrant to build a rich flavor base.
  2. Add Tomatoes, Broth, and Seasonings: Pour in crushed tomatoes and chicken or vegetable broth. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a simmer to allow all flavors to meld together beautifully.
  3. Cook the Noodles in the Soup: Break the lasagna noodles into bite-sized pieces and add them directly to the simmering pot. Cook until the noodles are tender but still slightly firm, similar to al dente lasagna sheets.
  4. Stir in Cheese: Lower the heat and gently swirl in dollops of ricotta cheese, allowing it to warm through without fully dissolving. Top with shredded mozzarella and sprinkle grated Parmesan cheese for a gooey and cheesy finish.
  5. Serve Hot with Fresh Basil: Once the cheese is melted and the soup is well combined, ladle it into bowls and garnish with torn fresh basil leaves for a bright and fresh aroma.

Notes

  • Drain excess fat after browning the meat to avoid an oily broth.
  • Add noodles towards the end to prevent them from becoming mushy.
  • Incorporate ricotta cheese last to maintain creamy pockets throughout the soup.
  • Let the soup rest off the heat for a few minutes to develop deeper flavors.
  • Use fresh herbs like basil or parsley for added brightness and freshness.
