Chicken and Marinade

Instructions

  1. Prepare the Marinade and Chicken: In a bowl, whisk together lime juice, lime zest, honey, minced garlic, olive oil, salt, and pepper. Add the chicken breasts and coat them well. Let the chicken marinate for at least 20 minutes to absorb the bright and tangy flavors.
  2. Cook the Rice: While the chicken marinates, cook jasmine or basmati rice following package instructions. Once done, fluff the rice with a fork and set aside to cool slightly for easier stacking.
  3. Cook the Chicken: Heat a skillet over medium heat and cook the marinated chicken breasts until golden brown and fully cooked, about 5-7 minutes per side. Allow the chicken to rest before slicing it thinly.
  4. Prepare the Avocado: Just before assembling, peel and slice the avocado. To prevent browning and add zest, sprinkle the avocado slices with fresh lime juice.
  5. Assemble the Stack: Using a ring mold or stacking by hand, start with a layer of rice, then add a layer of sliced honey lime chicken followed by avocado slices. Repeat layers as desired. Finish with a garnish of fresh cilantro and a squeeze of lime.
