Instructions

  1. Brown the Sausage: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned and cooked through. This creates a savory base for the soup.
  2. Sauté Onion and Garlic: Using a slotted spoon, remove the cooked sausage to a bowl. In the same pot, add diced onion and minced garlic and sauté until the onions become translucent and fragrant, absorbing the sausage flavors.
  3. Add Potatoes and Broth: Add the diced russet potatoes and pour in 6 cups of chicken broth. Stir to combine, bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender but not mushy, about 15-20 minutes.
  4. Incorporate Kale and Sausage: Return the browned sausage to the pot along with the chopped kale. Stir well and cook until the kale wilts and softens, approximately 5 minutes.
  5. Finish with Cream and Seasoning: Slowly stir in 1 cup of heavy cream. Season the soup with salt, black pepper, and optional red pepper flakes. Warm through on low heat without boiling, then remove from heat and serve.
