Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and add the elbow macaroni. Cook until just al dente, about 7-8 minutes, then drain and set aside to prevent mushiness when baked.
  2. Make the Roux: In a saucepan over medium heat, melt the butter and whisk in the flour to form a smooth paste. Cook for 1-2 minutes, stirring constantly to remove the raw flour taste and thicken the base.
  3. Add Milk and Seasonings: Slowly whisk in the whole milk, stirring continuously until the mixture thickens to a creamy consistency. Add salt, pepper, and optional mustard powder to enhance the flavors subtly.
  4. Melt the Cheese: Lower the heat and stir in shredded sharp cheddar and Gruyère cheeses until fully melted and smooth, being careful to avoid overheating to keep the sauce velvety and lump-free.
  5. Combine Pasta and Sauce: Pour the cheese sauce over the cooked pasta and gently stir to coat every noodle evenly with the cheesy sauce.
  6. Optional Baking: For a crispy topping, transfer the mac and cheese to a baking dish, sprinkle with breadcrumbs, and bake at 350°F (175°C) for about 20 minutes until bubbly and golden on top.
