Instructions

  1. Prepare the Chickpeas: If using canned chickpeas, rinse and drain them thoroughly to remove excess salt and starch for a smoother texture. If using dried chickpeas, soak overnight and cook until very tender for the creamiest base.
  2. Blend the Tahini and Lemon Juice: Combine tahini with fresh lemon juice in a food processor and blend for about one minute until the mixture thickens and becomes smooth, creating a luscious base.
  3. Add Garlic, Cumin, and Salt: Incorporate minced garlic, ground cumin, and salt into the tahini-lemon mixture. Blend briefly to evenly distribute these aromatic and flavorful ingredients.
  4. Add Chickpeas and Blend: Add the chickpeas to the blender and puree until smooth. Scrape down the sides as needed to ensure even blending without lumps.
  5. Adjust Consistency With Water or Aquafaba: Slowly add water or reserved chickpea liquid one tablespoon at a time while blending, until the hummus reaches a creamy, spreadable consistency without being too thick.
  6. Incorporate Olive Oil: Drizzle olive oil into the mixture and pulse a few times to integrate it, resulting in a silky finish that enhances flavor and mouthfeel.

  • Use fresh lemon juice and garlic to brighten and deepen the flavor.
