Instructions

  1. Mix the Dough: Combine masa harina and salt in a large bowl. Slowly pour in warm water while stirring continuously until a soft, pliable, and smooth dough forms, similar to playdough, not sticky or crumbly.
  2. Rest the Dough: Cover the dough with a damp towel and let it rest for 15 to 20 minutes to fully hydrate the masa and improve texture.
  3. Shape the Tortillas: Divide the dough into equal-sized balls about the size of a golf ball. Using a tortilla press or heavy flat-bottomed pan, press each ball between two sheets of parchment paper until about 6 inches in diameter and thin.
  4. Cook the Tortillas: Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for 50 seconds on the first side, flip and cook another 50 seconds, then flip one last time for about 10 seconds until cooked through but still soft and pliable.
  5. Keep Warm and Serve: Stack cooked tortillas and wrap them in a clean kitchen towel to keep warm and moist until serving, locking in softness and freshness.
