Instructions

  1. Prepare the Blueberry Swirl: Combine fresh or frozen blueberries with lemon juice and honey in a small saucepan. Simmer gently until the berries break down and form a luscious compote. Let it cool completely before swirling into your batter.
  2. Mix the Yogurt and Oats: In a mixing bowl, blend Greek yogurt, rolled oats, honey or maple syrup, and vanilla extract until smooth and evenly combined. This mixture will be the creamy base that holds the bars together with the perfect texture.
  3. Assemble the Bars: Pour half of the yogurt-oat mixture into a lined baking dish, then dollop spoonfuls of the cooled blueberry compote on top. Using a knife or skewer, gently swirl the blueberries into the base. Top with the remaining yogurt-oat mixture and smooth out evenly.
  4. Freeze and Set: Cover the dish and place it in the freezer for at least 4 hours or until firm. Once frozen, use the parchment paper to lift the slab out and cut it into individual bars.
