Instructions

  1. Prepare the Potatoes: Wash and dry each sweet potato thoroughly. Place one sweet potato on a cutting board. Carefully slice thin, even cuts across the potato, stopping just before you cut all the way through to keep the base intact and create a fan-like effect.
  2. Season the Potatoes: Brush or drizzle olive oil evenly over and between the slices of each potato. Sprinkle salt, black pepper, garlic powder, and optionally fresh rosemary or thyme over and inside the cuts to infuse the potatoes with flavor.
  3. Roast to Perfection: Arrange the seasoned sweet potatoes on a baking sheet lined with parchment paper. Roast in a preheated oven at 425°F (220°C) for 40–50 minutes until the edges become golden and crispy, and the inside is tender.
  4. Add Final Touches: If using toppings like cheese or nuts, add them during the last 10 minutes of roasting to melt or toast perfectly. Remove from oven and let potatoes rest for 5 minutes before serving.
